Swedish Shrimp Salad

Shrimp salad (Skagenröra in Sweden) is a staple on any midsummer menu. Typically served on top rye toast! Our take is served on a large platter surrounded by grained crackers, lettuce cups and various other vegetables so guests can assemble as they like-making it not only quick to serve, but also beautifully presented.

1 pound cooked salad/small shrimp
3 tablespoons crème fraîche
3 tablespoons mayonnaise
3 tablespoons fresh dill chopped
3 tablespoons minced scallions (white/light green parts only)
1 tablespoon lemon juice
Large pinch of salt
Fresh ground pepper to taste

In a large bowl, mix together the mayonnaise and crème fraîche. Add in the fresh dill, lemon juice, scallions, salt and pepper. Stir until well combined.
Add in the shrimp. Mix well to ensure all the shrimp are coated with sauce.
