Perfect Protein Pancakes

Breakfast for dinner ✨ We have breakfast for dinner in our house like every other week! It’s easy, we always have everything we need on hand, you know you’re going to get that protein in and everybody loves it! No complaints.

Especially these protein pancakes. I tried this recipe from @telloandrose a little while ago and y’all….they are so good and so fluffy!

Funny enough, my kids even asked for the leftovers from our “Breakfast for Dinner” for breakfast the next morning ;) Needless to say, there were none. You’ve gotta try them. And make extra!

PROTEIN 🥞

1/2 cup cottage cheese
3/4 cup milk
1 @vitalfarms egg
1 tsp vanilla
2 tbs butter melted
1 cup flour (we used @ballerinafarm protein flour)
2 tbs sugar
1.5 tbs baking powder
1/2 tsp salt

Blend the cottage cheese with the milk in a blender for 30 to 45 seconds.

Add to the rest of the ingredients and whisk together until well combined.
Let’s sit for a few minutes to fluff up and then cook on a griddle. Enjoy!
