Honey Dijon Crusted Chicken & Broccoli Salad
Everything gets a hit of @getsidedish Honey Dijon, adding big flavor and that perfect caramelization. And the broccoli? Devoured by my little one who swears she “hates” it. This one’s a keeper!
You’ll need:
• 1 bottle Side Dish Honey Dijon
• 1.5 lb chicken tenders
• Kosher salt
• Olive oil
• 1 cup panko breadcrumbs
• 12 oz broccoli florets
• 4 oz diced pancetta
• 1 shallot, thinly sliced
• 1/4 cup craisins
Here’s how to make it:
1. Preheat oven to 425°F.
2. Toss chicken tenders with 1 tsp kosher salt + 1/2 cup Honey Dijon. Let sit for a bit or go straight to the sheet pan (line with foil for easy cleanup).
3. In a bowl, mix panko, a big pinch of salt, 2 Tbsp olive oil, and 2 Tbsp Honey Dijon. Spoon over chicken to create a crust.
4. On a second sheet pan, toss broccoli, pancetta, and shallot with 2 Tbsp olive oil, 2 Tbsp Honey Dijon, and 1/2 tsp salt.
5. Roast both pans at 425°F for 17 minutes.
6. Remove from oven, sprinkle broccoli with craisins, and finish everything with a little drizzle of Honey Dijon.
7. Serve with extra sauce on the side—you’ll want it on everything.
