Cake Mix Confetti Cookies

My kids are always wanting to do a baking project when we are away but buying all of the individual ingredients can be such a waste! This recipe has four ingredients and while they’re great for making on a trip, they’re also great to quickly whip up at home! And if you love a chewy, cake cookie, these are the best!

1 box of vanilla cake mix
1/3 a cup of avocado oil
2 large eggs
1/4 cup of sprinkles of choice

Preheat oven to 350 degrees

Combine the eggs and oil and mix well. Add the cake mix and sprinkles and stir with a wooden spoon or spatula until all ingredients are incorporated.

Using a cookie scoop, scoop out cookies and place on a parchment lined sheet pan to inches apart. Sprinkle a few additional sprinkles over the top of the cookies.

Bake for 10 minutes. Remove from oven and let cool completely on pan.
