French Toast Casserole

This is perfect for prepping in advance and serving to a crowd- it’s our kids’ favorite way to kick off a ski day and there is something so nostalgic and comforting about French Toast! Make sure to save this one!

9 slices of brioche bread, about 1” thick
6 eggs
1 cup of half-and-half
1 tablespoon of vanilla
1/4 cup of maple syrup
1 teaspoon of cinnamon
pinch of salt

To sprinkle on top:
2 tablespoons of sugar
1 tablespoon of cinnamon
3 tablespoons of butter, cut into small cubes

Butter a 9x13 casserole dish.

Whisk together the eggs, half-and-half, vanilla, maple syrup, 1 teaspoon of cinnamon and a pinch of salt in a large shallow bowl.

Combine 2 tablespoons of sugar and 1 tablespoon of cinnamon in a small bowl.

Dip each piece of bread in the egg mixture and let it sit for about a minute. Place the piece of bread in the casserole dish and then sprinkle it with cinnamon-sugar mixture. Repeat with all slices of bread, slightly overlapping each piece. Once all the pieces have been added to the pan, sprinkle with the remaining egg mixture, followed by the remaining sugar and cinnamon mixture.

Cover and let sit in the refrigerator for at least an hour but up to overnight.

Preheat the oven to 350 degrees and let the pan come to room temperature while your oven is preheating. Sprinkle the cubes of butter on top.

Place casserole into the oven and let it cook for 30 minutes.

Cut into squares, sprinkle with powdered sugar and serve with maple syrup.
