Raspberry White Chocolate Rice Krispie Hearts
These Raspberry White Chocolate Rice Krispy Treats were our contribution to a Valentine’s Day cookie exchange and they completely stole the show. Rice Krispy treats are one of my favorite desserts to make with kids because there’s no baking involved, they come together quickly, and they always feel a little bit magical. The freeze-dried raspberries add a tart, fruity bite that balances beautifully with the sweetness of white chocolate. If you prefer something a bit sweeter, freeze-dried strawberries are a great swap. The perfect thing to make for Valentine’s Day with your kids.
Ingredients
1 oz bag freeze-dried raspberries or strawberries
1 stick unsalted butter (@vitalfarms )
8 cups mini marshmallows, with 1 cup reserved
6 cups Rice Krispies cereal
1 cup white chocolate chips or chopped white chocolate
💕❤️ Sprinkles
Instructions
Lightly crush the freeze-dried raspberries using your hands or a rolling pin and set aside. Butter a 9×13 pan and line it with parchment paper for easy removal.
In a large pot over medium-low heat, melt the butter. Add 7 cups of the marshmallows and stir gently until completely melted and smooth. Remove from the heat and immediately stir in the crushed raspberries, stirring to combine. Add the reserved 1 cup of marshmallows and the Rice Krispies, mixing just until everything is evenly combined.
Press the mixture gently into the prepared pan, being careful not to pack it down too tightly so the treats stay soft and chewy. Let set at room temperature until cooled, then cut into squares or use a heart-shaped cookie cutter.
Melt the white chocolate in the microwave in 30-second increments until smooth. Drizzle over the Rice Krispy treats and top with sprinkles. Let the chocolate set before enjoying.
