Pumpkin Bread Pudding

This recipe feels so fancy and special, yet is really easy to put together. Bonus, it’s two desserts in one! First, you make a batch of delicious pumpkin bread a day or two in advance, and enjoy half of the loaf with your coffee! Then, you cube up the other half and whisk together this dreamy rum custard (yes, we did) and pour it over the pumpkin bread and bake it. A true fall dream come true💫

For the pumpkin bread:
1 stick butter, melted
1 2/3 cup sugar
1 15 oz can pumpkin purée
3 eggs
1 teaspoon vanilla extract
1 1/2 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground clove
2 1/4 cups flour

Preheat oven to 350 degrees.

Whisk together the butter, sugar, pumpkin, eggs and vanilla in a large pan. Sprinkle the baking powder, baking soda, salt, cinnamon, ginger, nutmeg, clove and flour on top of the wet ingredients and whisk until fully combined. Pour into a greased large loaf pan (9x5, 6 cup pan) and bake for 70 - 80 minutes or until a toothpick comes out clean.

For the custard:
2 1/2 cups of half and half
2/3 cup sugar
3 eggs
1 teaspoon vanilla extract
1/4 cup rum
2 teaspoons dried ginger
1 teaspoon cinnamon
1 Tablespoon Turbinado sugar
Confectioners sugar for dusting

Whisk together the half and half, sugar, eggs, vanilla, rum and ginger in a medium bowl.

To assemble:

Preheat the oven to 350 degrees.

Cut the pumpkin loaf in half, and cut one half of the loaf into 1/2” cubes. You can enjoy the other half separately.

Arrange the cubes in a 12x7 inch oval gratin dish. Pour the custard mixture over the pumpkin bread. The tops of the pumpkin bread shouldn’t be fully submerged. Combine the turbinado sugar and cinnamon in a small bowl and sprinkle on top. Set aside for 10 minutes to let the bread soak up the custard.

Place the gratin dish in a large roasting pan and fill the pan with enough water to come halfway up the sides of the dish. Bake for 55-70 minutes until the custard is set. Remove the gratin dish from the water as soon as it is taken from the oven. Dust with confectioners sugar and serve warm.
