We asked my mom to share one of her tomato recipes for our
Tomato 🍅 Series. This is a dish she has been serving for years when hosting guests for dinner. A no-fail, tried-and-true crowd pleaser. And SO simple to make! Many of her go-to recipes she learned from her mother, my grandmother - who would just make them up! Some of these recipes we hold close-as our own “secret family recipes”.
So we are always thrilled when she has one to share with us-so that we can share with you!

The beauty of this recipe is that because you do not need a perfect summer tomato, you can serve this dish year round!

Serves 2

1 large tomato
1 tablespoon sherry cooking wine
1 tablespoon dried dill weed
1-1.5 cups shredded sharp cheddar
1/2 cup @hellmannsmayonnaise
Grated Parmesan cheese
Salt & pepper

Slice tomato in half. Place cut side up on a baking sheet lined with foil. Core and level the bottom of the tomato by slicing a tiny bit off the bottom so it sits flat. With a fork, poke holes all in the cut side of tomato.

Slowly drizzle 1 tablespoon of cooking sherry over the holes of each tomato. Salt and pepper each side. Then cover both sides with the dill.

Place under broiler for 10 minutes, until the skin of tomato starts to wrinkle a bit.

In a bowl, grate about a cup to a cup and half sharp cheddar. Stir 1/2 cup Hellmann’s into the cheese.
Top the hot tomatoes out of the oven with the cheese mixture. Sprinkle with a little grated Parmesan cheese.

Place back under broiler for 5 minutes or less - really watching - until brown and bubbly on top!
