Oysters with Jalapeño & Cilantro Mignonette

Many think of oysters as a delicacy you only order when out to dinner but we believe oysters are one of the easiest, and most elegant, appetizers you can serve when having company. This is the perfect time to utilize the fish monger at your local fish shop or market to shuck the oysters and place them on the half shell- they will do all the work for you! This mignonette is fresh and zesty- the perfect start to your fiesta 💫🇲🇽💫

1/4 cup white wine vinegar
2 Tablespoons shallots, finely diced
3 Tablespoons freshly chopped cilantro
1/4 teaspoons salt
1 small jalapeño, finely diced
1/2 teaspoon lime zest, finely grated
1 Tablespoon lime juice

Wisk together all ingredients to make a mignonette.
Let sit for 20 minutes before using.

2 dozen small to medium oysters on the half shell
1 cup rock salt

Scatter rock salt on a platter. Place oysters on the half shell on top of salt. Spoon mignonette over oysters.
