Lemony Whipped Ricotta with Pomegranate

We always like to put out something simple, but special, to start off a dinner party. This whipped ricotta is just that! Delicious, and makes a beautiful presentation, but takes about five minutes to put together, and because it’s the first thing you are serving, you can do it right before your guests arrive 💫

16 oz container of ricotta
2 Tablespoons lemon juice
2 Tablespoons honey
Zest of one lemon
1/4 cup pomegranate seeds
1/2 teaspoon thyme leaves
Extra Virgin Olive Oil
Flakey sea salt
Baguette for serving

1. Put ricotta into the bowl of a stand mixer and whip on high for two minutes until light and airy. Alternatively, use a hand mixer.
2. Add lemon juice, honey, half of the lemon zest, and whip for an additional minute.
3. Spoon the ricotta onto the center of a large round serving platter and sprinkle with the remaining lemon zest, thyme, pomegranate seeds and a large pinch of flaky sea salt. Then drizzle with extra-virgin olive oil.
4. Serve with sliced baguette or toasted crostini.
