Quick Pickled Cucumbers

We love to pickle everything, but by pickle we mean a “quick pickle.” Here is our formula below and you can use it for anything! Want to pickle red onions? Just use red wine vinegar instead and omit the dill. We love to serve these alongside anything and everything to give that added touch of acidity that’s always needed to finish a dish. Toss in a salad, put on a sandwich and serve aside our shrimp salad. A great way to use all those extra cucumbers all summer long! 

1 English cucumber, sliced thinly on the mandoline
1/2 cup white wine vinegar
1/2 cup of water
2 teaspoon kosher salt
2 Tablespoons chopped dill 

Combine all ingredients in a mason jar or Tupperware container and allow to sit in the refrigerator for at least 30 minutes before serving.
