Cracker Crusted Cod

While this dish is quick to come together, it has so many layers of deliciousness. Flaky cod, tangy Old Bay, creamy sauce and crunchy buttery crackers. A sort of grown up version of a fish stick that is elegant enough for a dinner party (can be prepped in advance up to topping cracker crumb- then just top it and bake it before serving) and easy enough for a weeknight.

4 6-oz pieces of cod
1 teaspoon Old Bay
12 Ritz crackers
2 tablespoons of butter
2 tablespoon of dried chives
Zest of 1 lemon
2 Tablespoon mayonnaise
1 Tablespoon of Dijon

Preheat oven to 450 degrees.

Sprinkle fish with Old Bay.

Place Ritz crackers in a ziplock bag and use a rolling pin or wooden spatula to crush the crackers until crumbled.

Melt butter in a large skillet over medium heat. Add crushed crackers and toast about 5 minutes.

Combine mayonnaise, lemon zest, Dijon and chives. Brush over fish filets. Top with Ritz crumbles.

Bake for 7-8 minutes uncovered and bake for another 7-8 minutes covered as not to burn the crackers!
