Chicken Parm Pizza

High-protein & low-carb! I cannot tell y’all how simple this is to make and it’s a FIVE out of FIVE dinner in our house - meaning all five people in my house like it, enjoy it and will eat it for dinner 🙌 That’s very rare around here!

I had this for the first time at quality Italian in New York City. We got one for the table and I was like….ohmygosh-we have got to re-create this! It’s basically making a huge chicken meatball and flattening it out very thin - topping with pizza sauce and mozzarella cheese and a sprinkle of Parmesan. Pop in the oven for like 15 minutes till the cheese is brown and bubbly and it’s done! I promise you everyone will devour it. I actually made it yesterday as an afterschool snack :)

1 pound of chicken
1/2 cup Italian breadcrumbs
3/4 teaspoon onion powder
3/4 teaspoon garlic powder
1 teaspoon salt
1 egg
About 1/2 cup panko breadcrumbs

Preheat oven to 350 degrees. Drizzle olive oil on a pan and put in preheating oven for five minutes.
Sprinkle panko breadcrumbs onto the hot olive oil. Pop back in oven for 2-3 minutes. Mix rest of ingredients together. Then pat chicken mixture real thin into a circle-ish disk onto the hot breadcrumbs.

Bake at 350 for 15 minutes or until internal temp reaches close to 165.

Take out. Turn oven to broil. Top chicken with your favorite pizza sauce. Sprinkle with shredded mozzarella on top a sprinkle of grated Parmesan.

Broil until brown and bubbly.

Use pizza cutter to slice and serve along with a side salad and 👌
