CAVIAR DIP 💫 I first learned about this dip when @theordervescompany posted @maxsinsteden recipe, and bookmarked it for the next time I wanted to feel a little fancy. This dip is spectacular! Stunning! Fabulous! It might even be the first thing mentioned when recapping a party the next day! First of all, it’s a chip and dip, and I LOVE that because blinis are just not good (sorry, I said it). Secondly, it is a great way to serve caviar when hosting a larger group (or a party of two- you can always tweak the proportions). Make sure you order your caviar from a direct-to-consumer company if possible; you will get a much better deal (I ordered from @kelleyskatch)! Make this for NYE because, let’s be real, this year could really benefit from ending on a high note!

Tweaked ever so slightly from @maxsinsteden recipe

7 oz caviar (I used the paddlefish from @kellyskatch and highly recommend for taste and value reasons)
8 oz creme fraiche
8 oz sour cream
1/4 cup minced chives, plus some extra to garnish
1 bag purple potato chips
1 bag of salted kettle potato chips

Using a rubber spatula, combine the creme fraiche and sour cream. Fold in chives. Then gently fold in caviar. Pour into a bowl and garnish with additional chives. Serve with potato chips (hot tip! Make sure to sort through your chips so you don’t serve any broken chips- broken chips and caviar are tragic and I will forever be indebted to @maxsinsteden for pointing out this crucial step💫)
