Buffalo Chicken Sliders

Nothing gives a warmer greeting from the slopes than a hot lunch and an even hotter toddie! These are dead simple and can be prepped in about five minutes before walking out the door in the morning. Also amazing scooped over shredded romaine, but we say you earned the sandwich!

Buffalo Chicken Sliders with Celery Slaw

Makes 8-10 sandwiches depending on size of buns

For the chicken:

4 boneless skinless chicken breasts
1 1/2 cups Buffalo sauce (@thenewprimal or @primalkitchenfoods 👌🏻)

Place all ingredients in a slow cooker for four hours on high. Shred chicken. Alternatively, you can shred a rotisserie chicken and put it on warm in a slow cooker with sauce.

For the slaw:

6 stalks of celery, thinly sliced, about 1.5 cups
1/3 cup red onion, minced
1/2 cup mayonaise
1 1/2 Tablespoons apple cider vinegar
1 cup crumbled blue cheese

Mix all ingredients together. Taste, and add salt if needed.

For assembly:
8-10 potato buns

Spoon a generous portion of the chicken onto the bottom half of a roll, then cover with celery slaw. Top with the other half of the bun and enjoy!
