Baked Thai Meatballs

We are kicking off our “What’s for Dinner” series as a tribute to all the moms out there trying to get dinner on the table! Scratch that- we are all trying to get delicious and easy dinners on the table. These baked Thai meatballs are gobbled up in our house and quick to come together or easily pulled from the fridge or freezer.

1 lb. ground Chicken
1/2 cup panko
1 egg, whisked
I Tablespoon soy sauce
I teaspoon fish sauce
2 teaspoon sesame oil
I/2 teaspoon ground coriander
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
2 Tablespoons minced scallions
2 Tablespoons minced cilantro
1 Tablespoon sweet chili sauce

Preheat oven to 400 degrees.

Combine all ingredients in a large bowl and mix together until well incorporated. Using a cookie scoop shape meatballs. Place each meatball on a large baking sheet. Bake for 18 minutes.

We love to serve these with rice, sautéed green beans and extra chili sauce for dipping.
