Baked Mozzarella, Tomato & Caper Crostini

The simplicity of these crostinis is what makes them so perfect. Who doesn’t love a little melty cheese? And the capers add an unexpected “wow.” These can be fully assembled a few hours before you wish to serve them and then popped in the oven to warm when guests arrive. Perfection. Serves 8 - 16 crostinis

1 baguette style loaf of bread
2 Tablespoons olive oil
5 Roma tomatoes
Kosher salt
16 slices of fresh mozzarella
3 Tablespoons of capers, rinsed and chopped
1/3 cup freshly grated parmigiana cheese

Preheat oven to 500 degrees

Slice baguette, on diagonal, into 16 slices. Brush each piece with olive oil. Toast in the oven for 5 minutes.

Slice tomatoes into at least 16 slices, about 1/4 inch thick. Lay them on paper towels to drain out excess moisture and sprinkle tomato slices with kosher salt.

Once bread had toasted, remove it from the oven. Lay a mozzarella slice on top of each piece of bread. Top with a sprinkling of capers, then a tomato slice, and finally a large pinch of parmigiana cheese.

You can prepare the crostini up to this point 2 to 3 hours in advance.

Before serving: preheat oven back to 500 degrees. Place crostinis in the oven for a few minutes until mozzarella melts. Serve warm.
